Zucchini Week!

One of my new year's resolutions this year was to become more domestic.  This week I was actually pretty good at it!

Sunday morning we took a trip to the Farmers Market to look around and pick up breakfast.  I got this awesome pastry to go with my iced coffee... yum!  I will definitely be visiting this booth again.  I'll report more info about this vendor next time.

And then we picked up some Zucchini, Corn, Green Beans, Onion, and Peppers.  This week's menu has included turkey burger maid rites (with onion & green pepper) & sweet corn, Taco Casserole, AND.....

Zucchini Lasagna!
This is one of my favorite recipes that came from a cookbook I picked up in my days at Rockwell Collins - Thank you Amie!   

Ingredients:

1lb - Ground Beef or Turkey

1 - Zucchini - chopped

1 - Onion - chopped

2 cans diced tomatoes or 5 fresh tomatoes

1 tsp -  Sugar

1 tsp - Oregano

1/2 cup - Parmesan cheese

2 cups - Cooked macaroni

2 cups - Mozzarella cheese

Brown Beef or Turkey in large skillet.  Mix in zucchini, onion, tomatoes, sugar, and oregano.  Sprinkle Parmesan cheese on mixture and cook over medium heat for 25 minutes.

Mix in cooked Macaroni.  I used cheese tortellini this time- yum! 

 Place in 9x13in baking dish and cover with Mozzarella cheese.  

Bake at 325 degrees for 30 minutes.

In addition to my domestic goddessness ... we also pampered Hubble this weekend by allowing TWO dog swims.  He had the time of his life.

Pure Bliss.  This dog LOVES to swim.

As for the humans, we were let down by our Hawkeyes with a loss this weekend... but at least we had fun watching our first game at Sports Column Denver!  It's definitely not quite the same as tailgating on Melrose or being there at Kinnick, but the mountain view compensates for that....
